Simple Gluten Free Gnocchi

Ingredients:

200g potatoes (russet or carisma)

20g Gluten Free Flour

5g light butter

1/4 tsp xanthan gum (omit if your flour blend already contains it)

salt


Recipe below (single serving): 1️⃣ Boil 200grams of carisma potatoes. Peel and mash with fork until lumps are removed. Add butter and salt, then refrigerate until cool. 2️⃣ Add 20grams of GF flour and the xanthan gum to potato mix and knead gently. It should hold together well when squeezed but not feel dry, add more flour if needed. 3️⃣ Carefully roll dough into 2cm thick tubes. Lightly flour a butter knife and cut gnocchi to your preferred size. 3️⃣ Bring a pot of water to the boil and add Gnocchi. Wait 2 minutes or until Gnocchi rise to the top of the water, then remove. 4️⃣ Add any sauce you’d like (I made a beef cheek ragù), and TA-DAH!
