Fetta and Zucchini Frittata

Zucchini Frittata

This one is my go-to breakfast right now. And believe me it is seriously AMAZING if I may say so myself. It’s low carb and gluten free, and most of all it's hella tasty! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

Ingredients:

500g grated zucchini

500g egg whites

2 eggs

40g almond meal

200g goats cheese or feta cheese ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

Simply combine everything in a large bowl. Line a deep baking tray with baking paper and pour mixture in. Bake for 20-25 mins at 180 degrees until set. Divide into 8 portions. Refrigerate or freeze for meal prep. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

16g protein

10g fat

2.5g carbs ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

*I normally have 2 slices for brekkie and it keeps me full for the entire morning! If you want to make this lower calorie/lower fat you can use half the amount of fetta cheese or substitute for cottage cheese.⠀
